Mango and Bell Pepper Salad

Following on the heels of my easy mango salsa recipe, here is another easy recipe with mangoes being the key ingredient. This salad is so refreshing in the summer and can be made in 15 minutes or less. It is the perfect salad for a summer barbecue or picnic. You don’t really need an event or a reason to make this recipe except when you have a craving for a salad and/or a craving for mangoes. An easy, colorful and refreshing salad that will make a great addition to your summer barbecue menu

Ingredients

  • Salad
  • 3 cups spinach

  • 1 ripe mango, diced

  • 1 red bell pepper, sliced into juliennes

  • 1 avocado, diced

  • 1 cup cilantro, chopped

  • 2 tablespoons dried cranberries

  • 1/4 cup sunflower seeds

  • Dressing
  • Juice of 1 lime (~3 tablespoons)

  • 1 tablespoon olive oil

  • 1 teaspoon fresh ginger, grated

  • 1 teaspoon maple syrup

  • 1/4 teaspoon sea salt or pink Himalayan salt

  • Fresh ground pepper

Directions

  • Add the salad ingredients to a large bowl.
  • Whisk the ingredients for the dressing until well combined.
  • Toss the salad with the dressing until well coated and serve.
